Περίληψη:The production of agro-industrial waste generates contamination and health risks if it is not handled properly; however, these by-products can be used to obtain edible mushrooms (Pleurotus ostreatus and djamor), also known as Oyster mushrooms or Oyster mushrooms with a high protein content. For this reason, the purpose of this work was to analyze the productive capacity of Gírgola Mushrooms, in different agro-industrial residues and their bromatological characteristics in fresh and dehydrated state; for which a Completely
