Summary:This research was conducted in the city of Quevedo, in the laboratories of the State Technical University of Quevedo, Laboratory for Basic Uses of land plants, and at the Laboratory of Food Science, Faculty of Animal Science . He also worked with the Laboratory of Nutrition lNlAP Santa Catalina Quito. The field work was included in the collection of bunches of bananas around the city of Quevedo, the Gros Michel banana type were collected in the Pathway Mocache on the farm belonging to the Familia Avilés . Bananas Orito type were collected in the City of Valencia road to La Maná in Hda . Ms. Digna Licta . In the same area were collected Cavendish bananas, which were harvested in the Hda.
