| Crynodeb: | The objective of this study was to characterize physical, chemical and sensory of the avocado oils Persea americana Mill And the Hass variety, Santana and Choquete obtained by the methods of extraction Soxlhet, Centrifugation and pressing. In the initial phase it was conducted in the laboratory process to extract avocado oil as preliminary tests, and then avocado oil was obtained according to the experimental design scheme.
