Riassunto:This project was based on the valuation of the ancestral gastronomic product as part of the cultural manifestation of the canton El Empalme. In the present investigation it was determined through direct observation, field work and a database, which revealed the ancestral food of the canton is for this reason that the traditional gastronomy of the sector could be identified. With the information gathered using the described methodology and through tabs it was possible to design an ancestral gastronomic route which refers to the location of the tourist attraction, accessibility of the establishment, hygiene, food safety and the description of the food, to be aware of the places or stops that promote their gastronomy in this way achieve the interest of tourists and residents of the area. Finally, the preparation of a recipe book for typical gastronomy, covering five dishes such as ceviche, encebollado, caldo de gallina criolla, seco de gallina criolla, arroz con menestra and carne asada, making known the ingredients and the method of preparation.
