| Sumario: | This research project is focused on evaluating the conservation method that allows extending the useful life of this tuber. The shelled cassava samples were subjected to osmotic dehydration (OD) by immersion in reflux with 5% CaCl2, at 27 ºC to prevent oxidation. To improve the process, it was impregnated with antioxidant agents at different concentrations 0.5%; 0.75% and 1% m/v were subjected to an oven at 40ºC with air recirculation at different times. Analysis was carried out by UV spectrophotometry, obtaining a maximum absorption peak (λ) at 260 nm, corroborating, at different times, that this was the band of maximum absorption where the oxidation response could be verified. The treatments that inhibited browning were: T3 impregnation with 0.75% ascorbic acid, T6 impregnation with 1% monosodium citrate and T8 with DO + impregnation with 0.5% monosodium citrate. This allowed us to demonstrate that the application of these antioxidant agents with or without DO prevent browning. In the sensory tests of these treatments there is no alteration or change in flavor. In the same way, the L*a*b color space was used, showing that these treatments presented a luminosity close to 100, that is, a tendency towards white color, the A* spectrum reflects values close to 0, indicating that there is no an orientation towards red or green and the B* spectrum with a slight tendency to increase the intensity of the yellow color, with values lower than 3. When using osmotic dehydration as a conservation method, the treatments presented a lower percentage of humidity, an increase of ash in its composition and a pH value of less than 7. |
