For this purpose, the critical points that generate wastewater in the SIEXPAL industry process were identified, the physical and chemical characteristics of the wastewater of the effluent and effluent of the grease trap (ATG, ETG), and effluent of the filter of gases (EFG), the parameters analyzed were: pH, temperature, Biochemical Oxygen Demand BOD, Chemical Oxygen Demand COD, phenols, total suspended solids, total iron, oils and fats. Once the residual was characterized, small-scale tests were carried out in a laboratory to determine the processes and unit operations applicable to the redesign of the system. The extractor generates a total flow of 3,495.77 m3 / year, in the palmistry and drying. The implementation of the redesign of the process was carried out on a laboratory scale. Thus, the current design of the plant includes process units that correspond to the implementation of a homogenization, neutralization, coagulation, flocculation and aerobic digestion system. The result obtained in the second run was adjusted to the objective of the study, achieving an efficient removal of oils and fats, BOD5, COD, phenols and fecal coliforms of 85.95%, 93.87%, 93.32%, 91.10 % and 93.63% respectively. Finally, the results of the treated wastewater samples met the quality criteria for discharge to the public sewer system established in Ministerial Agreement 097-A.
