| Streszczenie: | The purpose of this research work is obtaining ethanol from Artocarpus heterophyllus lam ( Jackfruit) considering different physiological states of the fruit. Objectives: To determine the ripeness of the fruit for the fermentation prior to ethanol, the comparison of two substrates (sugarcane juice and molasses), also was assessed as nutrient (ammonium phosphate) in some of the samples. The size of the samples was three thousand grams of Jackfruit pulp mature and semi-mature with the addition of the substrates. Fermentation lasted ten days at room temperature. Once completed the fermentation is proceeded to the filtration and distillation. Factors in the study were: A physiological states of the fruit (mature and semi mature), B nutrients (with ammonium phosphate and without ammonium phosphate), and C substrates (sugarcane juice and molasses) To establish the best treatment was used as variables: ºBrix, pH, acidity and alcoholic strength, these are carried out in the laboratory of Food Science of the State Technical University Quevedo. The statistical analysis was performed using Statgraphics Centurion program at the University of Massachusetts, using a completely randomized design that consisted in a factorial arrangement A * B * C with eight treatments and two repetitions. To distinguish between levels of studies that found significance. Balance sheet is made of the material into the best treatment (a0b1c0) which corresponds (Jackfruit mature + Without ammonium phosphate + cane juice). In which it is determined that the substrate more convenient is the juice from sugar cane as it had provided in this case the best attributes in the interactions.......... |
