Determination of trace elements in imported beef marketed in Hong Kong

The content of eight trace elements (As, Cd, Cr, Cu, Fe, Pb, Mn and Zn) and the color of beef ribeye from Brazil, China, New Zealand and USA was assessed to correlate both variables, as well as to define the percentage of PTWI in the average diet of Hong Kong people. Color measurement was carried out by using the CIELAB method (L*, a*, b*). Additionally, reflectance variables were calculated, based on a*/b* ratios, hue angle (h*) and saturation index (C*). Samples from China and New Zealand had significant ratios of a*/b*, 2.71 ? 0.51 and 1.94 ? 0.11 respectively, and denoted their highest redness. Also, significant yellow colors were identified b y the calculation of hue angle in samples from USA (33.91 ? 2.78). ICP-OES technique was used to determine the content of trace elements. Samples from United States had the highest content of Arsenic (0.37 ? 0.1 mg/kg) and Chromium (0.13 ? 0.09 mg/kg). Samples from New Zealand had the highest content of Lead (0.16 ? 0.06 mg/kg) and Cadmium (0.02 ? 0.01 mg/kg), while the lowest of Manganese (0.03 ? 0.01 mg/kg) and Zinc (22 ? 2 mg/kg). All analyses were carried out by using statistical significance of p-value < 0.05. The presence of Arsenic, Lead, Cadmium and Chromium in the samples did not indicate harm for public health. All countries were below the maximum permitted concentration of metals, defined in the Hong Kong Public Health and Municipal Services Ordinance. Color measurement results were correlated with the content of Copper, Manganese, Iron and Zinc for each country. The results showed a strong correlation of R square > 0.67 at p-value < 0.05 only in samples from USA between the content of Manganese with a*/b* and h*, as well as between Copper and h*.
