Esta investigación evaluó el proceso sanitario del ordeño para así controlar la calidad de la leche cruda procedente de los centros de acopio de las parroquias El Chaupi y El Pedregal pertenecientes al Cantón Mejía, que proveen a la empresa El Ordeño. Se monitoreo el proceso sanitario de ordeño de cada proveedor, se realizó un muestreo para tener un punto inicial y así dar capacitaciones para posteriormente realizar dos muestreos más; en cada muestreo se hizo análisis fisicoquímicos y microbiológicos para comparar los datos obtenidos con los de la Norma Técnica Ecuatoriana INEN 9:2012 y analizar la relación que tiene un adecuado “proceso sanitario de ordeño” con la calidad de la leche cruda. Las muestras fueron tomadas en los centros de acopio que proveen a la empresa El Ordeño de las Parroquias de El Chaupi y El Pedregal correspondientes al Cantón Mejía ya que la Asociación de Ganaderos de la Sierra y Oriente (AGSO), afirma que el 75% de la producción lechera en el país está en la Sierra siendo los representantes de mayor producción Machachi (Cantón Mejía), Azuay, Tungurahua, Carchi y Chimborazo. Se procedió al análisis estadístico (ADEVA) de los datos obtenidos, análisis que permitió concluir que un proceso sanitario de ordeño idóneo tiene una relación directa con la calidad de la leche cruda; es decir un proceso sanitario de ordeño provee de leche cruda que cumple con la Norma Técnica Ecuatoriana INEN 9:2012.
This investigation evaluated the sanitary process of milking in that way controlling the quality of the raw milk of the store centers of the sites The Chaupi and The Pedregal belonging to the Cantón Mejía, that they supply the company El Ordeño. The sanitary process of milking of every supplier was monitored, a sampling to have one initial point was accomplished and that way giving capacitation at a later time accomplishing two samplings more; In each one there were sampling physicochemical and microbiological analysis to compare the obtained data with the Ecuadorian technical standard INEN 9:2012 and analyzing the relation that has an adequate “sanitary process of milking” with the quality of the raw milk. The samples were taken in the centers of store that supply to the company El Ordeño. of the sites The Chaupi and The Pedregal belonging to the Cantón Mejía already than Ganaderos's Association of the sierra and Orient regions ( AGSO ), it affirms that 75 % of milk production at the country is in the sierra region being the representatives of bigger production Machachi (Canton Mejía ), Azuay, Tungurahua, Carchi and Chimborazo. It came from to the statistical analysis (ADEVA) the obtained data, analysis that it enabled concluding that a sanitary process of suitable milking has a direct relationship with the quality of the raw milk; It is saying a sanitary process of milking supplies raw milk that fulfills The Ecuadorian technical standard INEN 9:2012.
