Este Proyecto de Investigación propone crear una alternativa de dar valor agregado a productos primarios, que se ha construido mediante indicadores cuantitativos y cualitativos, que analizan la situación actual en el marco productivo y valor agregado en el sitio Tarugo de la Provincia de Manabí, Ecuador. La tesis se desarrollara en cuatro importantes capítulos, el primer consiste en definiciones relaciones con el tema de estudio, cadena de valor, valor agregado, productividad y los ejes de valoración. El segundo se encarga de los análisis de las realidades socio-económicas y productivas del sector Tarugo. El tercero es el resultado de dos métodos de estudios cualitativos y cuantitativos donde se realizó el levantamiento de información basada en forma de producción, tipo de cosecha, forma de comercialización. El cuarto es las posibles alternativas de soluciones para el mejoramiento y el desarrollo productivo del sector, métodos de valor agregado como la elaboración de lácteos, emplear diferentes métodos de conservación de frutas y hortalizas.
This thesis proposes to create an alternative to give benefit to primary products, which has been built through quantitative and qualitative indicators, which analyze the current situation in the productive framework and benefit in the Tarugo site of the Province of Manabí, Ecuador. The thesis was developed in four important chapters; the first consists of definitions related to the subject of study, value chain, benefit, productivity and the axes of valuation. The second is responsible for the analysis of the socio-economic and productive realities of the Tarugo sector. The third is the result of two methods of qualitative and quantitative studies where the gathering of information based on production form, type of harvest, form of marketing was carried out. The fourth is the possible alternatives of solutions for the improvement and the productive development of the sector, value added methods such as the elaboration of dairy, using different methods of conservation of fruits and vegetables.
