In Bolívar province there are representative products, such as sugarcane in the parish of Balzapamba where grinds are the protagonists, for their processes, traditions and why not say the culture that has marked history over time. With the objective of knowing the grindings of sugarcane and its socioeconomic contribution to the families of this parish, an investigation was carried out, taking as an important focus the artisanal processes of the production of the sugarcane derivatives, they have been studied through an existing theoretical basis of different authors and the collection of information obtained during several visits, applying both surveys and interviews, through a census made to the owners of the trapiches. A socioeconomic analysis was applied to know the sown area, the productive process, the investment of its resources, how many people work, its commercialization, and the contribution generated by this type of enterprise, concluding that it is long term; since once they start to elaborate their products, they increase their economy and they give employment to other businesses. In addition, it was determined that there is no brand that distinguishes it, nor advertising because the farmers do not have any type of help, whether public or private. It was determined that they do not have the sanitary registry management that allows to guarantee the quality of the product. However, what was most striking and evident was that all the income received by the sugarcane growers is not enough for the expenses they require in their homes; Therefore, the only contribution is to cover daily expenses without allowing them to grow economically, which is due to the prices of their products being excessively low in relation to the work involved in their production.
En la provincia Bolívar existen productos representativos, como es la caña de azúcar en la parroquia de Balzapamba donde las moliendas son los protagonistas, por sus procesos, tradiciones y porque no decir la cultura que han marcado historia a lo largo del tiempo. Con el objetivo de conocer las moliendas de caña de azúcar y su contribución socioeconómica a las familias de esta parroquia, se llevó a cabo una investigación, tomando como enfoque importante los procesos artesanales de la producción de los derivados de la caña, se han estudiado mediante una base teórica existente de diferentes autores y por la recopilación de información obtenida durante varias visitas, aplicando tanto encuestas y entrevistas, a través de un censo realizado a los dueños de los trapiches. Se aplicó un análisis socioeconómico para conocer área sembrada, el proceso productivo, la inversión de sus recursos, cuántas personas trabajan, su comercialización, y la contribución que genera este tipo de emprendimiento, concluyéndose que es a largo plazo; ya que una vez que empiezan a elaborar sus productos aumenta su economía y dan empleo a otros negocios. Además, se determinó que no existe una marca que la distinga, ni publicidad ya que los cañicultores no tienen ningún tipo de ayuda ya sea pública o privada. Se determinó que no poseen el manejo del registro sanitario que permita garantizar la calidad del producto. Sin embargo, lo más impactante y evidente fue que todos los ingresos que perciben los cañicultores no son suficientes para los gastos que requieren en sus hogares; pues, la única contribución es para cubrir los gastos diarios sin permitirles crecer económicamente, lo que se debe a los precios de sus productos siendo excesivamente bajos con relación al trabajo que implica su producción.
