“There is no modernity without a good tradition”. Gastronomy exists, crudely speaking, since humans discovered fire, element that permitted them to cook meat products, making them taste better and also more digestible. Since then, cooking techniques have changed and evolved over time to become what is now haute cuisine. Ecuador is a nation whose rich gastronomy is directly related to its biodiversity in flora and fauna, as its privileged geography means that there are in our country several microclimates that make our land fertile. The traditional dishes that have been prepared for centuries are the legacy of the peoples who inhabited this territory and the indispensable basis for what is now Ecuador’s haute cuisine. Especially in the mountains of Ecuador, both the dishes and the ingredients carry a history and socio-cultural context that are part of our identity until today, so the proposed menu reflect this identity search and rescue its meaning.
“No existe modernidad sin una buena tradición”. La gastronomía existe, rudimentariamente hablando, desde que el ser humano descubrió el fuego, elemento que le permitió cocer los productos cárnicos para darles un mejor sabor y hacerlos más digeribles. Desde entonces, las técnicas de elaboración han cambiado y evolucionado a lo largo del tiempo hasta llegar a lo que hoy es la alta cocina. El Ecuador es una nación cuya riqueza gastronómica está directamente relacionada con su biodiversidad en flora y fauna, ya que su privilegiada geografía hace que existan en nuestro país diversos microclimas que hacen a nuestra tierra fértil. Los platos tradicionales que se han preparado durante siglos son herencia de los pueblos que habitaron este territorio y la base indispensable para lo que hoy es la alta cocina ecuatoriana. Especialmente en la sierra ecuatoriana, tanto los platos como los ingredientes conllevan una historia y un contexto socio cultural que forman parte de nuestra identidad hasta hoy en día, por lo que el menú propuesto busca reflejar dicha identidad y rescatar su significado.
