The present work is a feasibility study for the production of grapes and vinegar to be made in the property The Edelmira located in the valley of Salinas in the Province of Imbabura. The study is projected to five years and it is planned to begin with one hectare of grapes of two different varieties (Cabernet-Sauvignon and Ribiera) soon to be increasing one hectare every year until covering a total area with five hectares. It is a study complete and detailed that goes from the preparation of the ground and to cover all the requirements with the plant, until the processing and commercialization of the product. To compete in the wine market is a difficult goal, has therefore been decided to produce vinegar in amounts greater than the wine. As much the consumption as the competition of wines at world-wide and national level is enough discharge, which does not happen to the vinegar coming from a red wine. Therefore most of the production to the processing of the vinegar with the purpose of being able has focused to compete in the market with greater facility.
El presente trabajo es un estudio de factibilidad para la producción de uva y vinagre a ser realizado en la hacienda La Edelmira ubicada en el valle de Salinas en la Provincia de Imbabura. El estudio está proyectado a cinco años y se planea comenzar con una hectárea de uva de dos variedades distintas (Cabernet-Sauvignon y Ribiera) para luego ir incrementando una hectárea cada año hasta cubrir un área total de cinco hectáreas. Es un estudio completo y detallado que va desde la preparación del suelo y cubrir todos los requerimientos de la planta, hasta el procesamiento y comercialización del producto. Competir en el mercado de vinos es una meta difícil, por esta razón se ha decidido producir vinagre en cantidades mayores que el vino. Tanto el consumo como la competencia de vinos a nivel mundial y nacional es bastante alta, lo que no sucede con el vinagre procedente de un vino tinto. Por esta razón se ha enfocado la mayor parte de la producción al procesamiento del vinagre con el fin de poder competir en el mercado con mayor facilidad.
