Research different specialties and traditions of the World Food Culture and its main relevant exponents within its most complex preparations, ingredients, raw material and dishes. Research that complements a cultural level knowledge of the reader in the basic areas of world cuisine. This research can be complementary to the existing text Gastronomic Culture at the College of Hospitality, Tourism and Culinary Arts from the Universidad San Francisco de Quito.
Investigación de diferentes especialidades y tradiciones de la cultura gastronómica mundial y sus principales exponentes relevantes tanto en preparaciones compuestas, ingredientes, materias primas y platillos. Texto investigativo que complementa a nivel cultural el conocimiento del lector en los ámbitos básicos para la comprensión de la gastronomía del mundo. Esta investigación puede ser complementaria al texto de Cultura Gastronómica existente en el Colegio de Hospitalidad, Turismo y Arte Culinario de la Universidad San Francisco de Quito.
