Aplicaciones pedagógicas del deshidratador de frutas en procesos de transformación agroindustrial.

The Cotopaxi Technical University, Salache extension currently has a plant for processing food products, specifically, in the Agro-industrial Engineering Career. With a modern technology, and a correct infrastructure its several areas. However, for the student pedagogical complementation, the different machinery use is required, which allows getting the product, making the student´s learning easier, through practices, which are directed by different area teachers charge. Into current document was elaborated an operation, maintenance and the pedagogical application manual of fruit dehydrator, which will facilitate its use and ensure a long life with an equipment better operation. For the project development was used research different types; descriptive, experimental, exploratory, basic explanatory, bibliographical documentary research and applying the instruments different types; observation, bibliographic techniques and observation sheets, these with the object of executing the project into an adequate way. Subsequently, it was made an operating manual, which was found the technical description, the equipment parts, properties and functionalities, requirements, start-up (on and off) and equipment operation mode, further, it was elaborated a maintenance manual, it suggested the routine preventive and corrective manual maintenance is suggested, with the stability several indications, which should be taken prior to its activation. Into a practical matter, it was dehydrated different fruits and a vegetable type (Pineapple, Strawberry and Potato), by demonstrating their correct operation.
