Description

La presente investigación tiene como propósito la determinación del potencial nutritivo - nutracéutico y establece índices de calidad para cuatro cultivares de tomate de árbol (,Solatium betciceum cav), así como la caracterización química de la pared celular de dos cultivares comerciales. Proyecto que fue financiado por FONTAGRO a través del proyecto FTG 14-03 ejecutado en el Departamento de Nutrición y Calidad del INIAP. Se utilizó los cultivares: Anaranjado gigante, Morado gigante, Mora ecuatoriano y Amarillo puntón, en su estado de madurez comestible cosechadas en las zonas productoras. En los cuales se evaluaron: peso, relación largo/diámetro, firmeza, rendimientos, color interno y externo, humedad, cenizas, pH, acidez titulable, vitamina C, sólidos solubles, azúcares totales y reductores, polifenoles y carotenoides totales, antocianinas, minerales, ácidos orgánicos y azúcares por HPLC, y el poder antioxidante.
The investigation present thesis has the puipose determination nutritionally potencial and establishing quality parameters in four ecotypes o f tree tomato (Solarium betaceum Cav), chemical characterization o f the cell wall o f two commercial ecotypes. This investigation was financed by FONTAGRO through the project FTG 14-03 executed in Nutrition and Quality Department of INIAP. It used ecotypes: Anaranjado gigante, Morado gigante, Mora ecuatoriano y Amarillo puntón, in their ripeness grade and harvested in the producers areas. In which evaluated: weigh, relation large/diameter, stability, yields, internal and external color, moisture, ashes, pH, acidity titratable, vitamin C, solubles solids, total and reducing sugar, polyphenols and total carotenoid , anthocyanins, minerals, organic acid and sugar for HPLC and antioxidants.
