The Ecuadorian food is a type of cuisine that has been growing along the years with each year that it has pass, but further than it has been saving the greatest secrets of taste and history of each one of the dishes that we have. It is little the amount of information that we have as Ecuadorians, about our traditions or about our heritage. There is no doubt that it has been difficult to find this kind of information because most of these information it is obtained by the oral Literature of each town or city, even of each person. That´s why the west cuisine, the sea cuisine has it different perspectives and types of recipes, witch along the time it is personalized by each cooker. With this menu I want to propose a new perspective of our cuisine and also rescue the more traditional memories that I have since I was a child. Beside I think it is important to let know each Ecuadorian that our food worth here and outside, we have to give excellent food and so we can give to our country an added value over everything, and with that we can demonstrate to everyone that the Ecuadorian cuisine has an history, tradition and some kind of style.
La comida ecuatoriana es una cocina que ha ido creciendo con el paso de los años, pero además de crecer ha ido guardando los más grandes secretos del sabor y de su historia tras cada uno de sus platos. Es muy poca la información que tenemos como ecuatorianos sobre nuestras raíces o nuestras tradiciones. Ha sido sin duda difícil encontrar este tipo de información debido a que la mayoría de esta se la obtiene gracias a la literatura oral de nuestro país. Es así como la cocina en la costa tiene sus distintas recetas y sus varias formas de preparación. Con este menú eh propuesto rescatar lo más tradicional, con las recetas que desde niña recuerdo y que quiero darles un giro para que cada ecuatoriano conozco y pruebe, además de brindarle un valor propio a lo nuestro para demostrar que la comida ecuatoriana tiene historia, sabor, tradición y estilo.
