Influencia del transporte sobre los parámetros físico-químicos de la carne de cobayos de la Asociación 13 de Junio

La Asociación 13 de Junio del Cantón Nabón es una organización de productores locales de cobayos y pollos, quienes se han organizado para criar, transportar, procesar y comercializar sus animales pretendiendo tener control desde la granja hasta su sacrificio. La investigación realizada en esta tuvo como finalidad caracterizar los parámetros técnicos del sistema de transporte de los cobayos previo al faenamiento para así determinar si éstos parámetros influyen en las características físico químicas de la calidad de la carne, información necesaria para fortalecer la cadena de producción y comercialización de cuyes del cantón Nabón y la zona sur del país .En el estudio se tomaron 25 muestras de 5 lotes diferentes en base a la normativa de muestreo INEN 776. Las variables de estudio y de transporte fueron: Modo de Transporte, Distancia, Tiempo, Periodo del Día y Densidad, así como de pH, Proteína y Textura en calidad de carne. Para caracterizar el sistema de transporte se evaluaron los parámetros más repetitivos y en cuanto a calidad de carne se realizó un ANOVA y un test posteriori de Tukey, con un IC del 95%. Ninguna de las variables de estudio presentó diferencias estadísticas (p>0,05), dado que se encontraron dentro de los rangos establecidos por la norma. En conclusión, el sistema de transporte y la calidad de la carne de la Asociación 13 de Junio cumple con los Lineamientos de manejo del sistema de Transporte y no afectan el producto final, puesto que el sistema de faenamiento es interno y relativamente corto. The Association "13 de Junio" from the city of Nabón is a local producer group of guinea pigs and chickens organized to raise, transport, process, and market their animals, with the aim of having control from farm to slaughter. The purpose of the research was to characterize the technical parameters of the guinea pig transport system prior to slaughter. To determine if these parameters influence the physicochemical characteristics of meat quality, information necessary to strengthen the production chain and commercialization of guinea pigs from the city of Nabón and the southern part of the country. In the study, 25 samples were taken from 5 different batches based on the INEN 776 sampling regulations. The study and transport variables were Mode of Transport, Distance, Time, Period of the Day, and Density, as well as pH, Protein, and Texture in meat quality. To characterize the transport system, the most repetitive parameters were evaluated, and, in terms of meat quality, an ANOVA and a Tukey post hoc test were performed, with a CI of 95%. None of the study variables presented statistical differences (p>0.05), since they were within the ranges established by the standard. In conclusion, the transportation system, and the quality of the meat of the 13 de Junio Association comply with the Transportation System Management Guidelines and do not affect the final product, since the slaughter system is internal and relatively short.
