Identity is a factor that is given by several key elements, there are also various types of identity, and some examples are: cultural identity, ethnic identity and historical identity. The Ecuadorian identity was born from two extremely strong processes, the first, the Spaniard conquest of America and the second, the creation of the nation, which is Ecuador today. Among the many things that changed with the arrival of the Spaniards, such as religion, language, clothing, more fundamental to our existence was food, but not just America lived this change, Europe was tremendously influenced from the products that were exported to this country. Through this research a system comprised of different products, which seek to show the determinants of the Ecuadorian cultural hybridization through cuisine, which determined one of the elements of our identity. It is then when we can talk about hybridization of gastronomy being historically and culturally so rich. La identidad es un factor que esta dado por varios elementos fundamentales, así mismo existen diversos tipos de identidad, algunos ejemplos son: La identidad cultural, la identidad étnica y la identidad histórica. La identidad ecuatoriana como tal nace a partir de dos procesos sumamente fuertes, el primero, la Conquista de España sobre América y el segundo, la creación del Estado Nación que hoy día es el Ecuador. Entre las muchas cosas que cambiaron con la llegada de los españoles, tales como la religión, el lenguaje, la indumentaria, entre otras una fundamental para nuestra existencia es la alimentación, pero no solo América vivió un cambio, Europa estuvo tremendamente influenciada a su vez por los elementos de consumo alimenticio que fueron exportados de este continente. Es entonces ahí donde podemos hablar de que la hibridación de la gastronomía es rica histórica y culturalmente. Mediante esta investigación se determino un sistema comprendido por diferentes productos los cuales buscan el mostrar los factores determinantes de la hibridación cultural ecuatoriana a través de la cocina típica, la cual constituye uno de los elementos de nuestra identidad.
